Cannabis-infused lemon bars can be a delightful twist on the classic recipe. Here's a general guide on how to make them:
Ingredients: For the crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cannabis-infused butter (softened)
- Pinch of salt
- For the lemon filling:
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 cup lemon juice (freshly squeezed)
- Zest of 1 lemon
- 4 large eggs

For dusting:
- Powdered sugar
Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease a baking dish (typically 9x9 inches).
- In a mixing bowl, combine the flour, powdered sugar, softened cannabis-infused butter, and a pinch of salt. Mix until the ingredients are well combined and form a crumbly dough.
- Press the dough into the bottom of the greased baking dish, spreading it out evenly. Use the back of a spoon or your fingers to create a compact and even layer.
- Place the crust in the preheated oven and bake for about 15 minutes or until it turns golden brown. Remove from the oven and set aside to cool slightly.
- While the crust is cooling, prepare the lemon filling. In a separate mixing bowl, whisk together the granulated sugar and flour until well combined.
- Add the freshly squeezed lemon juice, lemon zest, and eggs to the sugar-flour mixture. Whisk everything together until the mixture is smooth and the ingredients are fully incorporated.
- Pour the lemon filling over the slightly cooled crust, spreading it out evenly.
- Place the baking dish back into the oven and bake for about 20-25 minutes or until the filling has set and the edges start to turn golden brown.
- Once the lemon bars are done baking, remove them from the oven and let them cool completely in the baking dish.
- Once cooled, dust the top of the bars with powdered sugar. You can use a fine mesh sieve or a shaker to evenly distribute the sugar.
- Cut the bars into desired serving sizes and enjoy!
